Helly Raichura is a self-taught chef and founder of Indian restaurant, Enter Via Laundry, in Melbourne. Drawing inspiration from her heritage, travels and memories, she blends traditional Indian flavours and techniques with Australian native ingredients and seasonal produce to challenge perceptions of Indian food and celebrate its extraordinary depth, elegance and diversity.

Diwali is one of my favourite festivals. Growing up in India, it was always a time for family, friends, lighting diyas, decorating our homes and most importantly, sharing food.

There would always be an abundance of sweets, savoury snacks and delicious home-cooked meals. Every family has its own traditions, but food is always at the centre of the celebrations.

This vegetable pulao is one of those dishes that brings comfort and celebration together. It's fragrant with whole spices, packed with seasonal vegetables and fresh herbs, and something that can easily be made in a large pot to feed family and friends.

I love that it doesn't need much to accompany it. A simple bowl of yoghurt or raita is enough, although it also pairs beautifully with a curry or dal. For me, Diwali cooking is about generosity, sharing and bringing people together around the table.

Packed with veggies, this dish goes a long way but tastes special. (ABC News: Helly Raichura)
